2 lbs of very thin slices of meat
Marinade for the meat
1 tbsp of brown sugar
1 tbsp hoison sauce
11/2 tbsp black vinegar
2 tbsp balsamic vinegar
1 tbsp of chilli paste
2 tbsp of soy sauce
1tbsp of sambal
1 tbsp of ginger and garlic
1 tbsp of green chutney
2 lbs of button mushrooms chopped and suated
4 large potatoes boiled
1 large anahime peppers chopped
2 tbsp chopped cilantro
salt
1/2 tsp of citric acid
Method:
Marinate the meat for about 20 minutes from the ingredient list and keep aside.
Mix the sauted mushrooms, potatoes, salt, citric acid, and chopped cilantro, make sure and do a taste test to make sure the taste is according to your pallet. Start by filling the meat slices with about a 1 tbsp of the potatoe mixture and roll them up, heat up a pan with about 2 tbsp of olive oil and pan fry the rolls, make sure and cover the pan for about 5 min so they steam on their own, next turn them around and cook until the meat is cooked through. Veggie pops are excellent snack made with a mix of vegetables made into dumplings coated with bread crumbs and deep fried until crisp.
Oil 2 tb Beans 2tb Carrot 2tb
Green peas 2 tb Cauliflower 2 tb Corn 2 tb Salt
Mixed herb 1 ts salt
Pepper powder ½ ts
Spinach chopped ½ cup
Semolina ½ cup
Water 1 cup
All purpose flour 1 cup
Bread crumb ½ cup
Curry powder ½ ts
Heat oil in a pan add chopped bean, carrot, green peas, cauliflower, corn, sauté it and add salt, mixed herb, pepper powder, chopped spinach and add hot water, semolina mix it and put the lid on cook it in a slow flame for 4 to 5 minutes. After that sprinkle some curry powder cook it for 2 minutes and switch off the flame and add the all purpose flour and mix it well and make a dumplings.
Take some all purpose flour, in this drop the veggie dumplings to coat them and dip all the coated veggie pops in to the hot boiling water and again coat the all purpose flour mixture then dip it into the hot water and again in the bread crumbs then deep fry in the hot oil.
Serve this hot with favorite sauce.

For Kashmiri Tea:
Doodh (Milk) 2 & ½ cup Badam (Almonds) crushed ½ tbs Pistay (Pistachio) crushed ½ tbs Cheeni (Sugar) to taste (optional) Kehwa 4 tbs or as required Badam (Almonds) crushed for garnishing Pistay (Pistachio) crushed for garnishing
Directions:
In kettle, add water,kashimiri tea leaves,star anise,cloves,cardamom seeds,salt and baking soda,bring it to boil.
Let it simmer for 20-30 minutes until it reduces to half.
Add chilled water and mix well for 8 to 10 minutes and cook for 5 minutes.
Strain and set aside, kehwa is ready and can be refrigerated for up to 4-5 days.
For Kashmiri tea,in kettle,add milk,almonds(crushed),pistachio(crushed),sugar (optional)and give it a good mix.
Add kehwa and cook for few minutes.
Finally pour the tea in cups,add almonds(crushed) and pistachio(crushed).
Kashmiri tea is ready.

Serves 4-5
Recipe in English:
Ingredients:
-Simply sufi breast fillets ½ kg
-Dhania powder (Coriander powder) 1 tsp
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Paprika powder 1 & ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Mustard powder 1 & ½ tsp
-Namak (Salt) 1 tsp or to taste
-Pani (Water) ½ Cup or as required
-Imli ka pulp (Tamarind pulp) 2 tbs
-Pyaz (Onion) 1 large
-Hari mirch (Green chilies) 1-2
-Lehsan (Garlic) 5-6 cloves
-Adrak (Ginger) 1 inch piece
-Curry pata (Curry leaves) 8-10
-Tamatar (Tomatoes) blanched 4 medium
-Sufi cooking oil ¼ Cup
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-Cut chicken fillets into cubes then wash & pat dry and set aside.
-In bowl,add coriander powder,red chili powder,turmeric powder,paprika powder,cumin seeds,mustard powder,salt,water and mix well.
-Add tamarind pulp,mix well & set aside.
-In blender jar,add onion,green chili,garlic,ginger,curry leaves,blend well & set aside.
-Remove skin of blanched tomatoes.
-In grinder,add tomatoes and grind to make a puree & set aside.
-In pot,add sufi cooking oil,blended onion mixture and cook for 5 minutes.
-Add chicken boneless cubes,mix well until changes color and fry until light golden.
-Add grinded tomato puree,mix well and cook for 6-8 minutes.
-Now add prepared spices mixture,mix well and bring it to boil.
-Add fresh coriander,cover and cook on low flame for 8-10 minutes.
-Garnish with fresh coriander & serve!

Ingredients:
-Beef boneless cubes ½ kg
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 2 tbs

-Hari moong daal (Split green lentil) ½ Cup (soaked overnight)

-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:

-In frying pan,add desi ghee and let it melt.

-Cooking oil 2-3 tbs
-Adrak (Ginger) chopped ½ tsp

-Namak (Salt) ½ tsp or to taste

-Grease griddle with oil,pour prepared batter and spread evenly (makes 4-5).
-Add cooking oil and cook from both sides on low flame until light golden.
Pineapple & Tomato Chutney:
-In frying pan,add cooking oil,ginger and mix well.
-Add tomatoes,pineapples and mix well.
-Add red chili crushed,salt,nigella seeds,sugar,tomato ketchup,mix well and cook for 2-3 minutes.
-Add water and mix,cover and cook on low flame for 6-8 minutes then mash with the help of the help of the masher.
-Cover and cook on low flame for 4-5 minutes.
-Add lemon juice and mix well.

-Add cardamom powder,almonds,pistcahios and mix then scarp all cream from the sides of the pot,mix gently and let it cool down.

Serves 5-6
Recipe in English:
Ingredients:
-Prema milk 1 litre
-Khoya crumbled 1/4 Cup
-Cheeni (Sugar) 3-4 tbs or to taste
-Elaichi powder (Cardamom powder) ½ tsp
-Badam (Almonds) crushed 1 & ½ tbs
-Pista (Pistachios) crushed 1 & ½ tbs
Directions:
-In wok,add milk and bring it to boil and cook on low flame for 1 hour & keep sticking balai (cream) on the sides of the pot until half quantity of milk remains in the pot.
-Add khoya,mix well and cook on low flame for 4-5 minutes.
-Add sugar,mix well and cook until sugar is dissolved.
-Add cardamom powder,almonds,pistcahios and mix then scarp all cream from the sides of the pot,mix gently and let it cool down.
-Garnish with pistachios & serve!

-Khoya dal ker aceh tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein.
-Cheeni dal ker ache tarhan mix karein aur cheeni gul janay tak apak lein.
-Elaichi powder,badam aur pista dal ker mix karein phir pot ki sides sa balai ko nikal lein aur gently mix ker lein & thanda ker lein.
-Pista sa garnish ker ka serve karein.

Cookies 4-Ways with one Dough Without Oven
Recipe in English:
Ingredients:
-Makhan (Butter) soft 200g (room temperature)
-Bareek cheeni (Caster sugar) 2/3 Cup
-Brown sugar powdered 1/3 Cup
-Vanilla essence ½ tbs
-Namak (Salt) ½ tsp tsp
-Anday (Eggs) 2 (room temperature)
-Maida (All-purpose flour) 2 & ½ Cups
-Baking soda ½ tsp
-Baking powder ½ tsp
-Oreo biscuits crushed
-M&M’s bounties
-Milk chocolate chunks 3-4 tbs
-Bareek cheeni (Castor sugar) 3-4 tbs
-Darchini powder (Cinnamon powder) 1 tbs
-Instant coffee powdered 1 tbs
Directions:
-In a bowl,add butter,caster sugar,brown sugar,vanilla essence,salt & beat until creamy.
-Add eggs & beat again.
-Place strainer on the bowl,add all-purpose flour,baking soda,baking powder and sift together.
-Mix well with the help of spatula & refrigerate for 15 minutes.
-In a bowls,separate dough into four sections.
Oreo Cookies:
-In one bowl,add oreo biscuits & mix gently.
M&M’s Cookies:
-In second bowl,add m&m’s bounties & mix gently.
Chocolate Chunk Cookies:
-In third bowl,add milk chocolate chunks & mix gently.
-Now take 1 tbs of dough mixture from each bowl and make a balls.
Cinnamon Coffee Cookies:
-In a separate bowl add,caster sugar,cinnamon powder,instant coffee & mix well.
-Take 1 tbs of dough mixture from 4th bowl,make a ball & coat with coffee,cinnamon & sugar mixture.
-Lined baking tray with butter paper,place cookies and decorate with coffee,cinnamon & sugar mixture, oreo biscuits,m&m’s bounties,milk chocolate & press gently.
Baking in Oven:
-Bake in preheated oven at 170 C for 15-18 minutes (on lower grill).
Baking without Oven:
-In pot,add 1 pack of salt,place wire rack (min 2“high) and preheat for 10 minutes.
-Place cookies,cover and bake in pot on low flame for 18-20 minutes.
-After baking,cook down cookies at room temperature for 30 minutes.
