I made some changes in the recipe on the video!

Ingredients:
2 lb of the ground lamb or beef (my mom says it would be best if you have a mix of both types of meat)
2 onions grated and strained (mom says its really important to make sure there is no onion juice. Squeeze all the juice as much as possible before adding)
1 large egg (beaten)
5 medium tomatoes to be used for later when grilling or baking
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper tablespoon (optional)
1/2 teaspoon garlic powder (optional, mom adds it in sometimes. Also if you wanna add fresh garlic, ground 2 cloves into meat mixture.)
Directions:
Mix meat, onions, egg, salt and pepper(s) wellz Make sure to massage it throughly. Leave in the refrigerator overnight (or for several hours but its best to leave it for longer).
Press the meat around long, thick metal skewers. This is the difficult part. Make sure not to put too much meat on each skewer. It\'s taken lots of practice for my mom to perfect how much meat to put on each one. Make sure the skewers are thick as well. If they\'re too thin, the meat won\'t hold. Thread whole tomatoes on another skewer. Barbeque each side for about five minutes, turning frequently. If skewers are not available or barbequing is not possible, kabab-e koobideh can be shaped into long, thin portions on aluminum foil and grilled at high temperature in the oven.
Serve with hot Saffron rice or on middle-eastern bread. If serving with rice, add a little sumac on top.

Delicious fork tender baked potatoes with a cheesy homemade cheese sauce!
Ing for the potatoes:

5 lbs of baking potatoes cubed
4 tbsp unsalted butter

1 tsp lemon pepper

Method:
Sprinkle the potatoes with olive oil and go ahead and add all the rest of the seasoning making sure you mix all the ingredients really well. Cover the potatoes with some aluminium foil and stick them in the oven at 400 degrees for about 25 min, depending on your oven you might need to increase the time, make sure they are fork tender.
Cheese Sauce
4 tbsp unsalted butter
2 tbsp all purpose flour
2 cups milk
1/2 tsp of white pepper
16 oz cheddar cheese (can add more if you like)
Melt butter in a sauce pan and add the all purpose flour stir well until you get a very light brown color, add the milk and stir continuously stir it with a silicone whisk making sure there is no lumps in there, continue to stir until it starts to thicken up, now add the white pepper and the cheese keep stirring continuously until the cheese has melted. 21/2 cups chopped spinach
1 cup frozen peas
1 tbsp fresh dill weed chopped
1 tbsp ginger and garlic
1 tsp green chutney
salt to taste
1 1/2 cups rice soaked in water for 20 min
3 cups hot water
Method
Fry chicken and keep aside, soak rice and keep it aside, in a separate pot add the oil and let it warm up then add the green chutney and the ginger garlic, give it about 30 seconds for the flavors to infuse then add the spinach and dill week, saute this for a while and then go ahead and add the peas making sure you mix it all really well give it 2 minutes. Add the hot water let the water come to temp again in the mean time add the salt and to a taste test making sure that it is moderately salty. Water is not supposed to be boiling to add the rice, add the rice and let the water come to a boil, once it boils and the rice should start cooking, it should be half way done, next add the onions stir carefully making sure not to break the rice, next turn your stove on low and add the fried chicken again making sure to stir very carefully. Cover and put the lid on and cook for another 5 to 7 minutes. You can barbeque this rice with warming up the coal and adding the oil and cover again for a couple minutes.

1 cup spring onions diced
1 cup celery diced
1/3 cup red bell pepper diced
1/3 cup orange bell pepper diced
1/3 cup green bell pepper diced
1 cup shredded carrots
3/4 cup coleslaw
2 eggs (optional)
Salt to taste
pepper to taste
1 1/2 cups of boiled beef
Method:
Heat the oil and add the onions and stir fry a little, followed by the celery, the three colored peppers, carrots, and coleslaw saute all the veges making sure you don't cook it too much as the veges will become soggy. Add the salt and pepper make sure you do a taste test at this time, and if you choose to add the eggs this is the time you add the eggs in the middle of the pot and stir mix all the veges together and lastly go ahead and add the cooked meat, give it a good stir and mix the rice with all the veges making sure not to break the rice. Cover the rice and let it cook for just five min, uncover stir again and enjoy... Can be served with the crunchy noodles and soy sauce with a bit of hot sauce!!

A dangerously delicious finger licking chicken nihary that is really easy and tasty!
Ing:
1 Chicken cut in 8 pieces
1 large onion Julianned
1 tbsp ginger and garlic
1 tbsp nihary masala
1 fresh lime juiced
2 tbsp white flour
1/2 cup water
salt to taste
fresh ginger Julianned for garnishing
1/4 cup canola oil (1/2 cup was a bit too much)
Method:
In a pot add the oil and fry the sliced onions till golden brown and set aside, next in the same oil add ginger and garlic, making sure you don\\\'t burn it, than add 1 tbsp of the Shan nihary masala and fry it in the oil, once it has released the flavors add the chicken and turn it so it is completely mixed with the spices, cover till the chicken is cooked. In the mean time mix the water with the flour and this will be our thickening agent for the curry, keep it aside. At this time prepare the cucumber pickle. While you are making the pickle keep an eye on the chicken turning it occasionally. Make sure not to over cook the chicken as doing this will make the chicken really tough and dry. Add the flour and water mixture in the curry and stir till it thickens up a bit. If you want more gravy add more water to it, if you want the nihary thick than don\\\'t add the extra water. 1/2 a onion julianed thin
3 to 4 small baby pickles sliced thin
1 lime juiced
1 tbsp vinegar
salt to taste

A dangerously delicious finger licking chicken nihary that is really easy and tasty!
Ing:
1 Chicken cut in 8 pieces
1 large onion Julianned
1 tbsp ginger and garlic
1 tbsp nihary masala
1 fresh lime juiced
2 tbsp white flour
1/2 cup water
salt to taste
fresh ginger Julianned for garnishing
1/4 cup canola oil (1/2 cup was a bit too much)
Method:
In a pot add the oil and fry the sliced onions till golden brown and set aside, next in the same oil add ginger and garlic, making sure you don\\\'t burn it, than add 1 tbsp of the Shan nihary masala and fry it in the oil, once it has released the flavors add the chicken and turn it so it is completely mixed with the spices, cover till the chicken is cooked. In the mean time mix the water with the flour and this will be our thickening agent for the curry, keep it aside. At this time prepare the cucumber pickle. While you are making the pickle keep an eye on the chicken turning it occasionally. Make sure not to over cook the chicken as doing this will make the chicken really tough and dry. Add the flour and water mixture in the curry and stir till it thickens up a bit. If you want more gravy add more water to it, if you want the nihary thick than don\\\'t add the extra water. 1 whole chicken cut and cleaned and skinned
2 tsp ginger and garlic
salt to taste
lemon pepper to taste
1 tsp of black pepper
Marinate the chicken with the above ing and put it in the oven on 400 for about 35 min or until chicken is cooked through.
Gravy Ing:
1 tsp of cumin
1 tbsp of whole peppercorns
11/2 cup of rice krispies or cornflakes
11/2 cups of roasted unsalted peanuts
1/2 cup canola oil
salt to taste
Method:
In a small sauce pan dry roast the cumin and the peppercorn to release the flavors making sure not to burn the spices, next put them in a spice grinder and powder the spices. In a sauce pan add about 2 tbsp of olive oil and leave it to warm up in the mean time once the spices are done add them In the food processor with the rice krispies and the peanuts turn the processor on and make sure it has blended well then slowly turn the processor on and start adding the olive oil in it slowly until the mixture has incorporated really well. Next add the mixture to the sauce pan stir and cook for about 2 min. Once the chicken is done add the chicken as well as the drippings in the gravy. Make sure you do a taste test and adjust the seasonings per your taste. Lastly add the chopped coriander and enjoy!

2 lbs of button mushrooms chopped and suated
4 large potatoes boiled
1 large anahime peppers chopped
2 tbsp chopped cilantro
