Crispy Chicken Cutlets
Recipe in English:
Ingredients:
-Chicken boneless cubes ½ kg
-Paprika powder 1 tsp
-Lehsan powder (Garlic powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Onion powder 1 tsp
-Fresh parsley/Hara dhania (Fresh coriander) chopped 2 tbs
-Cheddar cheese grated ½ Cup
-Breadcrumbs 1 Cup or as required
-Dried oregano 1 tsp
-Paprika powder 1 tbs
-Anday (Eggs) 3
-Cooking oil for frying
Directions:
-In chopper,add chicken boneless cubes and chop well.
-In bowl,add chicken mince,paprika powder,garlic powder,salt,black pepper powder,white pepper powder,onion powder,fresh parsley/fresh coriander and mix until well combined.
-Add cheddar cheese,mix well & refrigerate for 10 minutes.
-In a bowl,add breadcrumbs,dried oregano,paprika powder,shake well & set aside.
-In bowl,add eggs,whisk well & set aside.
-Grease hands with oil,take a mixture and make a ball (65 gms),coat in breadcrumbs,press and shape into square shape then dip into beaten eggs and again coat in breadcrumbs (makes 8-9).
-Can be stored in freezer for up to 1 month.
-In frying pan,heat cooking oil and fry on medium low flame from both sides until golden brown.

-Add lemon slices,mix well and simmer for 2 minutes.
-Pour in a serving cup through strainer,add honey,mix well & serve.
-Drink twice a day.

-Darchini (Cinnamon sticks) 2-3

Born on August 25, 1934, the influential Iranian politician and writer was the fourth president of the Islamic Republic, serving from 1989 to 1997.
Rafsanjani was the head of the Assembly of Experts from 2007 to 2011. The influential cleric was elected chairman of the Iranian parliament in 1980 and served until 1989. He assumed office as the Chairman of the Expediency Council in 1989.

-Fresh milk 1 ltr
-Vinegar 2 tbs
•For Sheera:
-Sugar 1 cup
-Water 1 & ¼ cup
•For Sweet Milk (Rabri):
-Fresh milk 1 litre
-Sugar ¾ cup or to taste
-Cardamom powder ½ tsp
-Water 2 tbs + cornflour 1 ½ tbs
-Kewra water 1 tbs
-Tetrapak cream 2 tbs
-Almond and pistachio for garnishing
Directions:
•Prepare Cheese Balls:
-Heat milk and bring it to boil.
-Add vinegar and mix it. Strain in cheese cloth and rinse curdled milk with cold water.
-Press to strain excess water.
-Knead to form a soft dough for 8-10 mins and divide and make small ball with no crack.
•Prepare Sheera:
-In a sauce pan, add sugar and water and bring it to boil.
-Add cheese balls, covered and simmer for 6-8 mins.
-Set aside in chilled water.
•Prepare Sweet Milk (Rabri):
-In a pot, heat milk, add sugar and cardamom powder.
-In small bowl,mix water and corn flour and add it to rabri milk.
-Add kewra water and boil until 1/3rd of milk remains and keep stirring in between.
-Remove from flame and add tetrapak cream and give it a good mix.
-Remove cheese balls from cold water and press cheese balls to strain excess water.
-Place cheese balls on serving plate, pour sweet milk (rabri).
-Garnish with almonds and pistachio, refrigerate for 1-2hours.
-Serve chilled.

Khubani ka Meetha Recipe in English:
Ingredients:
-Sukhi khubani (Dried apricots) 200 gms (soaked overnight)
-Cheeni (Sugar) ½ Cup or to taste
-Pani (Water) ¼ Cup or as required
-Khubani ka badam (Apricot almonds)
-Doodh (Milk) 400 ml
-Cheeni (Sugar) 4 tbs or to taste
-Vanilla custard 2 & ½ tbs
-Doodh (Milk) 100 ml
-Cream for garnishing
Directions:
-Wash and soak dried apricots in enough water for overnight.
-Deseed the apricots and keep the hard kernels aside and break the kernels with the help of the cutter.
-Throw away the hard covering and keep the apricot almond side for later use.
-In pot,add sugar and soaked apricots with water and mix well until sugar dissolves.
-Cover and cook on low flame for 10-12 minutes or until apricots gets soft.
-Add water and mix well.
-Cover and cook for 2 minutes.
-Turn off the flame and blend the mixture with the help of the blender until smooth.
-Add apricot almonds,mix well & let it cool.
-In pot,add milk and sugar,whisk well and bring it to boil.
-In bowl,add vanilla custard,milk and mix well.
-In milk,gradually add dissolve custard and whisk continually & let it cool.
-In serving bowl,add cooked khubani mixture,prepared custard and garnish with cooked khubani mixture,cream,apricot almonds & serve.

-Hari mirch (Green chilies) chopped 4-5
-Kaju (Cashew nuts) ¼ Cup
-Kashkhash (Poppy seeds) 2 tbs
-Pani (Water) 2-3 tbs or as required
-Ghee 2-3 tbs
-Zeera (Cumin seeds) 1 tsp
-Maida (All-purpose flour) 1 & ½ tbs
-Pyaz (Onion) grinded 1 Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Mutton boneless cubes ½ kg
-Dahi (Yogurt) whisked 1 Cup
-Namak (Salt) 1 tsp or to taste
-Garam masala powder 1 tbs
-Pani (Water) 2-3 Cups or as required
-Tamatar (Tomato) sliced 1 medium
-Hara dhania (Fresh coriander) chopped
-Anda (Egg) whisked 1
-Oil (hot) ½ Cup
Directions:
-In grinder,add green chilies,cashew nuts,poppy seeds and water,grind to make a paste & set aside.
-In pot,add ghee and let it melt.
-Add cumin seeds and mix.
-Add all-purpose flour and mix well for 2 minutes.

-Add mutton and mix well until changes color.
-Add yogurt,ground paste and mix well.
-Add salt and garam masala powder,mix well and cook for 2-3 minutes.

-Cover and cook on medium low flame until meat is tender (20-25 minutes).
-In serving dish,add cooked meat,tomato slices,fresh coriander and pour beaten egg and hot oil.

Recipe in English:
Ingredients:
-Falsay (Grewia) washed ½ Kg
-Pani (Water) 1 Cup
-Cheeni (Sugar) 1 kg
-Pani (Water) 1 litre
-Lemon juice ¼ Cup
-Kala namak (Black salt) 1 & ½ tbs
-Falsa sharbat (Grewia syrup) 2 tbs or to taste
-Ice cubes
-Pani (Water) chilled 1 Cup
Directions:
-In pot,add grewia and water,mix well and cook for 5 minutes.
-Cover and cook on low flame until soft (5-6 minutes).
-Now mash well with masher then strain with the help of the strainer by adding little water in between, discard seeds & set aside.
-In wok,add sugar and water,mix well and cook until sugar is dissolved and continue cook until syrup thickens.
-Now add cooked grewia pulp,mix well and cook on medium low flame for 2-3 minutes.
-Add lemon juice,black salt and mix well,bring it to boil and cook for 5-6 minutes.
-Let it cool down.
-Can be stored in refrigerator for up to a month (yields 1.5 litres).
-In serving glass,add grewia syrup,ice cubes and water.
-Stir & serve.

Apple Custard Kheer
Serves 5-6
Recipe in English:
Ingredients:
-Saib (Apple) ½ kg
-Cheeni (Sugar) 3-4 tbs or to taste
-Chawal (Rice) basmati 1/4 Cup (soaked for 2 hours)
-Doodh (Milk) 1 & ½ litre
-Cheeni (Sugar) 3-4 tbs or to taste
-Pista (Pistachios) crushed 2-3 tbs
-Kishmish (Raisins) 2 tbs
-Badam (Almonds) crushed 2-3 tbs
-Rafhan custard powder 2 tbs
-Doodh (Milk) ½ Cup
-Elaichi powder (Cardamom powder) ½ tsp
Directions:
-In frying pan,add apples (grated with the help of the garter),mix well and cook on low flame for 5-6 minutes.
-Add sugar,mix well and cook until sugar is dissolved.
-In mortal & pestle,add soaked rice,crush well & set aside.
-In wok,add milk and bring it to boil.
-Now crushed rice,cook on low flame 4-5 minutes and mix continuously.
-Now add cooked apples mixture,sugar,mix continuously and cook on low flame for 10-12 minutes.
-Add pistachios,raisins,almonds and mix well.
-In custard powder,add milk and mix well.
-Now add dissolve custard,mix continuously and cook until custard is thick.
-Add cardamom powder and mix well.
-In serving dish,add apple kheer and garnish with apple slices,pistachios and almonds.
-Chill in refrigerator & serve!
