1 tbsp of green chutney

1 tbsp warm water
11/2 tsp yeast
1 tsp sugar
2 cups all purpose flour
2 tbsp ghee or soft butter
1 egg
pinch of walt
warm milk to bind a soft dough
Let the dough rise for about 20 minutes and prepare the filling
2 cups shredded meat
2 tbsp olive oil
2 tbsp tomato paste
1 tsp mustard seeds
1 tsp cumin
3 to 4 curry leaves
1 tbsp lemon pepper
1 tsp gharam masala
1 tsp turmeric powder
salt to taste
1 egg for eggwash
For the filling add 2 tbsp olive oil in a saucepan when warm add the mustard seeds pop, next add the cumin seeds, curry leaves, turmeric, gharam masala, lemon pepper, and tomato paste stir and let the tomato paste cook with all the spices, season the mixture with salt that suits your taste lastly add the shredded meat mixture and let cook, if the mixture seems dry add about 2 tbsp water so the meat absorbs all the seasoning. Let cool than follow the video directions to roll and stuff the meat buns! put it in a lined tray sprayed with some shortening and brush it with egg wash and put it in the oven for approximately 18 minutes or until nice and golden, serve with tamarind chutney..

This recipe shall be for the ones who always have been asking us for the recipe of filo (phyllo or yufka recipe) dough! Turkish Borek Phyllo dough is very easy to find in Turkey but here we prepared it by ourselves so that the ones that can not find it in their country can also have börek in their homes! In this video, you will learn how to make börek with minced meat as well. It is not a very easy recipe but its totally worthy.Start by transfering the oil into a big pot Add the minced onion, cook for 2-3 minutes with the lid on Add the ground beef to the onions roasted When the beef is cooked, add salt,black pepper and red pepper flakes To start preparing the phyllo doughs, transfer the flour into a large bowl Add the salt in Start kneading while you slowly add water The dough should be medium hard Cover it and leave for at least half an hour Cut the dough into 12 equal pieces Take them out only when you need, so it doesn\'t get dry Roll the dough untill very thin Place it into a greased oven tray (With a round tray it is easier) On the other side, for the sauce ...beat an egg Add two tbs. 2 lb of the ground lamb or beef (my mom says it would be best if you have a mix of both types of meat)
2 onions grated and strained (mom says its really important to make sure there is no onion juice. Squeeze all the juice as much as possible before adding)
1 large egg (beaten)
5 medium tomatoes to be used for later when grilling or baking
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper tablespoon (optional)
1/2 teaspoon garlic powder (optional, mom adds it in sometimes. Also if you wanna add fresh garlic, ground 2 cloves into meat mixture.)
Directions:
Mix meat, onions, egg, salt and pepper(s) wellz Make sure to massage it throughly. Leave in the refrigerator overnight (or for several hours but its best to leave it for longer).
Press the meat around long, thick metal skewers. This is the difficult part. Make sure not to put too much meat on each skewer. It\'s taken lots of practice for my mom to perfect how much meat to put on each one. Make sure the skewers are thick as well. If they\'re too thin, the meat won\'t hold. Thread whole tomatoes on another skewer. Barbeque each side for about five minutes, turning frequently. If skewers are not available or barbequing is not possible, kabab-e koobideh can be shaped into long, thin portions on aluminum foil and grilled at high temperature in the oven.
Serve with hot Saffron rice or on middle-eastern bread. If serving with rice, add a little sumac on top.

-Cover and cook on medium low flame until meat is tender (20-25 minutes).
-In serving dish,add cooked meat,tomato slices,fresh coriander and pour beaten egg and hot oil.

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-In pressure cooker,add beef boneless cubes,cumin seeds,salt,black pepper crushed,ginger garlic paste, green chili paste,water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 40-45 minutes) then mash well,take out in a bowl & set aside.
-In pressure cooker,add split green lentil,wheat,rice,water,mix well & bring it to boil.
-Cover and cook on medium flame until tender (approx. 1 hour).
Prepare Kabab:
-In bowl,add beef mince,green chili paste,ginger garlic paste,salt and mix well.
-Add gram flour and mix until well combined.
-Grease hands with oil,take a mixture and make small kababs of equal sizes (makes 40-45).
-In frying pan,heat cooking oil and fry kababs until golden brown & set aside for later use.
-Turn off the flame and blend the mixture with the help of the blender until required consistency.
-Turn on the flame,add cooked meat and mix well.
-Add salt and mix well.
-Add water and mix well.
-Now add prepared kababs and give it a good mix.
Tadka:
-In blender,add spinach,green chilies,blend well & set aside.
-In frying pan,add desi ghee and let it melt.
-Add blended green paste and fry for 4-5 minutes.

-In bowl,add chicken mince,red chili powder,turmeric powder,garam masala powder,salt,gram flour and mix until well combined.
-Give a charcoal smoke for 2 minutes.
-Grease hands with oil,take a mixture 1 tbs and make meat balls of equal sizes (makes 30-32).
-In wok,add cooking oil and fry meatballs until golden brown & set aside.
-In the same wok,add onion and sauté until translucent and take out in a bowl & set aside.
-In grinder,add almonds and grind well.
-Add sautéed onions and grind to make a smooth paste.
-In the same wok,heat cooking oil,add grinded onion & almonds paste and mix well.
-Add ginger,garlic paste,grinded green chilies and mix well.
-Add salt and mix.
-Add chicken white korma and mix well.
-Add yogurt,mix well and cook for 2-3 minutes.
-Now add fried meatballs and mix gently.
-Cover and cook on medium flame for 5 minutes then cook on high flame until oil separates.
-Add cream,mix well & set aside.
-In pot,add half quantity of boiled rice,meat balls with gravy,mint leaves,fresh coriander and remaining quantity of boiled rice.
-In kewra water,add yellow food color and mix well.
-Add dissolve food color and ghee,cover and steam cook on low flame for 8-10 minutes & serve!

Ingredients:
-Chicken mince (Qeema) 750 gms
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder 1 tsp
-Namak (Salt) 1 tsp or to taste
-Baisan (Gram flour) roasted 3-4 tbs
-Koyla (Charcoal) for smoke
-Cooking oil 1 Cup
-Pyaz (Onion) sliced 3 medium
-Badam (Almonds) 12-15
-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Hari mirch (Green chillies) paste 4-5 tbs
-Namak (Salt) 1 tsp or to taste
-Shan white korma masala 1 pack
-Dahi (Yogurt) whisked 250 gms
-Cream 200 ml
-Chawal (Rice) sella 1 kg (soaked & boiled with 2 tbs salt until 3/4th done)
-Podina (Mint leaves) chopped ½ Cup
-Hara dhania (Fresh coriander) chopped ½ Cup
-Kewra water 1 tbs
-Zarda ka rang (Yellow food color) 1/3 tsp or as required
-Ghee 1 & ½ tbs
Directions:
-In bowl,add chicken mince,red chili powder,turmeric powder,garam masala powder,salt,gram flour and mix until well combined.
-Give a charcoal smoke for 2 minutes.
-Grease hands with oil,take a mixture 1 tbs and make meat balls of equal sizes (makes 30-32).
-In wok,add cooking oil and fry meatballs until golden brown & set aside.
-In the same wok,add onion and sauté until translucent and take out in a bowl & set aside.
-In grinder,add almonds and grind well.
-Add sautéed onions and grind to make a smooth paste.
-In the same wok,heat cooking oil,add grinded onion & almonds paste and mix well.
-Add ginger,garlic paste,grinded green chilies and mix well.
-Add salt and mix.
-Add chicken white korma and mix well.
-Add yogurt,mix well and cook for 2-3 minutes.
-Now add fried meatballs and mix gently.
-Cover and cook on medium flame for 5 minutes then cook on high flame until oil separates.
-Add cream,mix well & set aside.
-In pot,add half quantity of boiled rice,meat balls with gravy,mint leaves,fresh coriander and remaining quantity of boiled rice.
-In kewra water,add yellow food color and mix well.
-Add dissolve food color and ghee,cover and steam cook on low flame for 8-10 minutes & serve!
