Abu Bakr Saddique was raised by a woman known around the city of Buffalo, NY as a champion of human rights and a helper of the poor. In his neighborhood of mostly Italian-American immigrants, Saddique says there was one incident that stood out for him in particular.
“I was out front playing. We were in the projects – only black family on the street. And I saw this lady. She was a white lady. She was walking down the street and she was going from apartment to apartment – and we lived in a row house. People were slamming the door in her face. She got to our house, and my mother opened up the door and invited her in. So I’m out playing, everything is tight. We’re on welfare. I go into the house and there was this woman sitting down there – eating. I said, ‘woah, what is this? Man, she’s eating up our food.’ You know? And my mother, it was like she didn’t care. She said, ‘she needed to eat’. She gave her food and she gave her some money. Yes. That’s how she was. And she said, ‘always be kind to strangers’”.
Saddique was six and the year was 1953. He says his mother’s character and behavior in situations like this prepared the ground for his eventual conversion to Islam. Saddique first learned about the religion in fourth grade.
“There was Niagara Street Library. I got a book on the Crusades about Richard the Lionheart. That peaked my interest in Islam because they couldn’t say anything about Salahuddin Ayyubi not being good. I saw Muslims in the 50s – some NOI (Nation of Islam), some orthodox. Malcolm X also used to come to Buffalo a lot in the 50s and 60s”.
It wasn’t until 1973, when Saddique was training at an Army base in Texas, that his interest in Islam began to take shape.

Delicious Homemade Fajitas - English
A delicious homemade fajita, that is easy to put together for a great back to school lunch or a simple snack!
Ing:
1/4 green bell pepper cut in thin slices

A delicious homemade fajita, that is easy to put together for a great back to school lunch or a simple snack!
Ing:
1/4 green bell pepper cut in thin slices
1/4 red bell pepper cut in thin slices
1/4 yellow bell pepper cut in thin slices
1 small onion thinly sliced
enough chicken to make as many fajitas as you like
1 tsp ginger and garlic
1 tsp lemon pepper
1 tsp of black pepper
salt to taste
1/2 a lime
Tortillas as many as you need to make
Method:
First clean and cut the chicken in long slivers and keep it aside. In a frying pan add about 1 tbsp of olive oil and once hot add the vegetables and stir fry then keep that aside once the onions become a little translucent. Keep all this aside, then in the same pan add 1 tbsp of olive oil and add the chicken as well as the ginger, garlic, salt, pepper, and lemon pepper. Cook it until the juices run clean and splash it with half a lime juice. Start assembling the tortillas by warming the tortilla a little bit of vegetables as well as the chicken, add your favorite sauce and you have a healthy delicious homemade lunch or snack!

Pan Note: I know many will ask, so I’ll just say it now; yes, you can use any oven-safe 10-inch pan to make this, but I have a tough time believing it will come out as wonderfully textured as it would if you use a cast-iron skillet. Putting the batter into a smoking hot pan seems to be one of the big keys here.
Ingredients for 6 portions (one 10-inch cast iron pan):
2 cups lukewarm water
1 1/2 cups garbanzo bean flour (aka chickpea flour)

•For Cheese Balls:
-Fresh milk 1 ltr
-Vinegar 2 tbs
•For Sheera:
-Sugar 1 cup
-Water 1 & ¼ cup
•For Sweet Milk (Rabri):
-Fresh milk 1 litre
-Sugar ¾ cup or to taste
-Cardamom powder ½ tsp
-Water 2 tbs + cornflour 1 ½ tbs
-Kewra water 1 tbs
-Tetrapak cream 2 tbs
-Almond and pistachio for garnishing
Directions:
•Prepare Cheese Balls:
-Heat milk and bring it to boil.
-Add vinegar and mix it. Strain in cheese cloth and rinse curdled milk with cold water.
-Press to strain excess water.
-Knead to form a soft dough for 8-10 mins and divide and make small ball with no crack.
•Prepare Sheera:
-In a sauce pan, add sugar and water and bring it to boil.
-Add cheese balls, covered and simmer for 6-8 mins.
-Set aside in chilled water.
•Prepare Sweet Milk (Rabri):
-In a pot, heat milk, add sugar and cardamom powder.
-In small bowl,mix water and corn flour and add it to rabri milk.
-Add kewra water and boil until 1/3rd of milk remains and keep stirring in between.
-Remove from flame and add tetrapak cream and give it a good mix.
-Remove cheese balls from cold water and press cheese balls to strain excess water.
-Place cheese balls on serving plate, pour sweet milk (rabri).
-Garnish with almonds and pistachio, refrigerate for 1-2hours.
-Serve chilled.

-Ab is mein cheese balls shamil karein,dhak ker halki ancch per 6-8 mins kliya rakh dein.
-Thanday pani mein dal ker side per rakh dein.
•Prepare Sweet Milk (Rabri):
-Pot mein doodh garam karein,cheeni aur elaichi powder shamil karein.
-Ek chota bowl mein pani aur corn flour dal ker mix ker lein aur rabri milk mein shamil karein.
-Ab is mein kewra water shamil karein aur 1/3rd doodh reh janay tak paka lein,bech mein musalsal chamcha chalatay rahein.
-Chulhay sa hata lein,aur tetrapak cream dal ker ache tarhan mix ker lein.

Recipe in English:
Ingredients:
•For Cheese Balls:
-Fresh milk 1 ltr
-Vinegar 2 tbs
•For Sheera:
-Sugar 1 cup
-Water 1 & ¼ cup
•For Sweet Milk (Rabri):
-Fresh milk 1 litre
-Sugar ¾ cup or to taste
-Cardamom powder ½ tsp
-Water 2 tbs + cornflour 1 ½ tbs
-Kewra water 1 tbs
-Tetrapak cream 2 tbs
-Almond and pistachio for garnishing
Directions:
•Prepare Cheese Balls:
-Heat milk and bring it to boil.
-Add vinegar and mix it. Strain in cheese cloth and rinse curdled milk with cold water.
-Press to strain excess water.
-Knead to form a soft dough for 8-10 mins and divide and make small ball with no crack.
•Prepare Sheera:
-In a sauce pan, add sugar and water and bring it to boil.
-Add cheese balls, covered and simmer for 6-8 mins.
-Set aside in chilled water.
•Prepare Sweet Milk (Rabri):
-In a pot, heat milk, add sugar and cardamom powder.
-In small bowl,mix water and corn flour and add it to rabri milk.
-Add kewra water and boil until 1/3rd of milk remains and keep stirring in between.
-Remove from flame and add tetrapak cream and give it a good mix.
-Remove cheese balls from cold water and press cheese balls to strain excess water.
-Place cheese balls on serving plate, pour sweet milk (rabri).
-Garnish with almonds and pistachio, refrigerate for 1-2hours.
-Serve chilled.

-Sirka shamil ker k mix karein. Mulmul ka kapra mein chaan lein aur thanday pani dal dein.
-Daba ker k ezafe pani nikal lein.
-Dough ko ache tarhan ghond lein 8-10 mins kliya aur chotay size ki balls bana lein.
•Prepare Sheera:
-Sauce pan mein cheeni aur pani dal ker ubal lein.
-Ab is mein cheese balls shamil karein,dhak ker halki ancch per 6-8 mins kliya rakh dein.
-Thanday pani mein dal ker side per rakh dein.
•Prepare Sweet Milk (Rabri):
-Pot mein doodh garam karein,cheeni aur elaichi powder shamil karein.
-Ek chota bowl mein pani aur corn flour dal ker mix ker lein aur rabri milk mein shamil karein.
-Ab is mein kewra water shamil karein aur 1/3rd doodh reh janay tak paka lein,bech mein musalsal chamcha chalatay rahein.
-Chulhay sa hata lein,aur tetrapak cream dal ker ache tarhan mix ker lein.
