Crispy Chicken Cutlets
Recipe in English:
Ingredients:
-Chicken boneless cubes ½ kg
-Paprika powder 1 tsp
-Lehsan powder (Garlic powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Onion powder 1 tsp
-Fresh parsley/Hara dhania (Fresh coriander) chopped 2 tbs
-Cheddar cheese grated ½ Cup
-Breadcrumbs 1 Cup or as required
-Dried oregano 1 tsp
-Paprika powder 1 tbs
-Anday (Eggs) 3
-Cooking oil for frying
Directions:
-In chopper,add chicken boneless cubes and chop well.
-In bowl,add chicken mince,paprika powder,garlic powder,salt,black pepper powder,white pepper powder,onion powder,fresh parsley/fresh coriander and mix until well combined.
-Add cheddar cheese,mix well & refrigerate for 10 minutes.
-In a bowl,add breadcrumbs,dried oregano,paprika powder,shake well & set aside.
-In bowl,add eggs,whisk well & set aside.
-Grease hands with oil,take a mixture and make a ball (65 gms),coat in breadcrumbs,press and shape into square shape then dip into beaten eggs and again coat in breadcrumbs (makes 8-9).
-Can be stored in freezer for up to 1 month.
-In frying pan,heat cooking oil and fry on medium low flame from both sides until golden brown.

White Sauce:
-Makhan (Butter) 2 tbs
-Lehsan (Garlic) crushed ½ tbs
-Cream 1 Cup
-Namak (Salt) ½ tsp or to taste

-Italian seasoning 1 tsp
-Fresh parsley chopped 1 tbs

Pizza Dough:
-Khameer (Instant yeast) 1 & ½ tsp
-Cheeni (Sugar) 1 tbs
-Neem garam pani (Lukewarm water) ½ Cup
-Maida (All-purpose flour) sifted 3 Cups
-Namak (Salt) 3/4 tsp
-Cooking oil 2 tbs
-Pani (Water) 1/4 Cup or as required

Assembling:
-Mozzarella cheese grated
-Cooked chicken
-Mushrooms sliced
-Pyaz (Onion) sliced
-Lal mirch (Red chili) crushed

-Shimla mirch (Capsicum) julienne

-Lal mirch (Red chili) crushed

Directions:
Prepare Chicken Filling:
-In bowl,add chicken,salt,black pepper powder,mixed herbs,garlic,mix well & set aside.
-In frying pan,add cooking oil and marinated chicken,mix well and cook until chicken is done & set aside.
Prepare White Sauce:
-In saucepan,add butter and let it melt.
-Add garlic and mix.
-Add cream and mix well.
-Add salt,black pepper powder,italian seasoning,fresh parsley and mix well.
-In egg yolk,add 1-2 tbs of prepared white sauce and whisk well.
-Now add in saucepan and mix well.
-Add cheddar cheese and mix until cheese melts & set aside.
-Stuffed chicken seekh kabab with prepared white sauce & set aside.
Prepare Dough:
-In small jug,add instant yeast,sugar,lukewarm water and mix,cover and let it rest for 10 minutes.
-In bowl,add all-purpose flour,salt and mix.
-Add cooking oil,dissolve yeast mixture and mix well.
-Gradually add water and knead until dough is formed.
-Grease dough with oil,cover and let it rest for 30 minutes or until double in size (warm place).
-Knead dough again,sprinkle corn flour and divide into two equal parts.
-Take one part and make a ball,sprinkle corn flour and roll out with the help of rolling pin.
Assembling:
-Now place rolled dough on greased baking pan,add mozzarella cheese and stuff the edges of the dough with stuffed seekh kabab and roll dough inwards to close.
-Prick with fork and add prepared white sauce and spread evenly.
-Add mozzarella cheese,cooked chicken,mushrooms,onion,red chili crushed,cheddar cheese,capsicum, mozzarella cheese and sprinkle red chili crushed (makes 2 large pizza).
Option # 1: Baking in Oven
-Bake in preheated oven at 180 C for 15 minutes.
Option # 2: Baking without Oven
-In pot,add 1 pack of salt,place wire rack (min 2“high),cover and heat on high flame for 15 minutes.
-Place pizza,cover and let it cook on medium low flame for 15-20 minutes.

-Add dried fenugreek leaves,fresh coriander and mix well.

-Karhai mein cooking oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Tamatar dal dein aur naram hunay tak paka lein.
-Chopper mein pyaz+tamatar mixture aur pani dal dein aur blend ker ka puree tayyar ker lein & side per rakh dein.
-Karhai mein cooking oil,hari elaichi,darchini aur tez paat dal ker mix karein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Lal mirch dal ker ache tarhan mix karein.
-Ab pureed tamatar & pyaz dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Haldee powder,namak,kashmiri lal mirch powder,dhania powder,zeera powder,garam masala powder, baisan,kaju powder aur chicken powder dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Kasuri meethi aur hara dhania dal ker ache tarhan mix ker lein.

2 lbs of fat free meat
Marinade for meat
1 tbsp fresh ginger and garlic
1 tsp lemon pepper
salt to taste
1/4 cup soy sauce
2 tbsp of cornstarch to be added after 20 min
Pan fry the meat and keep it aside
1 cup thinly sliced carrots
1 cup green bell peppers sliced thinly
1 cup red bell peppers sliced thinly
7 to 8 spring onions cut about 11/2 inches
prepare and keep aside
For the sauce
1 cup water
1/2 cup soy sauce
1 tsp ginger and garlic
1/3 cup brown sugar
1 tsp chili garlic sauce
1 tbsp cornstarch
Mix and keep it aside
Method:

Ing:
Preheat oven to 400

Ing:
Preheat oven to 400
2 cups oil
2 lbs chicken breast cut in long strips
1 tbsp ginger and garlic
salt to taste
1/2 tsp of pepper
3/4 tsp lemon pepper
Marinate your chicken
1 cup white flour
season the flour with
1/2 tsp of salt
1/2 tsp garlic powder
eggs
season eggs with
1/2 tsp salt
1 tsp lemon pepper
11/2 cups panko bread crumbs
season the panko bread crumbs with 1 tbsp dried parsley flakes
Method:
Start of by preparing your chicken and marinating it. Get all your other ingredients and season that well too, next take a chicken strip dip it in flour first, then egg, then lastly dip it in panko bread crumbs and make sure it\'s coated well, prepare all of them and if you are baking them put them on a greased pan and stick them in the oven, if you are going to fry them heat your oil, test your oil if it sizzles then add the chicken strips in one by one on med heat, it should take 5 to 7 minutes for the chicken to cook through!
Bake the chicken for about 25 to 30 minutes making sure it is cooked through! I served them with homemade fries!

depending on how cold it is you can add
1 sugar to the yeast in
1 cup water
salt to taste
1 egg
7 tbsp oil
Method:
Sift your flour in the container you are going to knead your dough next add salt, egg, and olive oil, mix it really well, now slowly start adding the water and yeast mixture this should make a sticky dough, keep kneading for about 3 min and you should have a nice soft dough. Let the dough rise till it has doubled in size, then make small individual balls and roll them out to about 5 to 6 in in diameter. You will need some extra flour for dusting while you roll the pitas. Start laying them on a floured surface to prevent them from sticking, start cooking the rotis with the first one you had rolled out that way it will give it some time to rise a little, in a med hot pan put the rotis one by one on the frying pan, flip only twice, you can add a little olive oil to prevent it from drying out!
Makes about 25
